SAVOURY SUNDAY ROAST

Nothing could be more simple or delicious than a beef roast. It provides a comforting dinner, plus many easy weekday meals.

INGREDIENTS
4 - 5 lb   1.8 - 2.2 kg   Inside Round, Outside Round, Rump or Sirloin Tip Oven Roast
1 tbsp   15 mL   minced garlic (3 cloves) or (1 tsp/5 mL) garlic powder
1 tbsp   15 mL   coarsely ground pepper

PREPARATION TIME: 5 minutes
COOKING TIME: 1 3/4 - 2 1/4 hours

DIRECTIONS
Place roast fat side up on rack in roasting pan without lid. Rub with garlic cloves and sprinkle with pepper or use variations below. Insert meat thermometer into center of roast. Add 1-1/2 cups (375 mL) water to pan and place roast in preheated 500°F (260°C) oven. After 30 minutes, reduce oven temperature to 275°F (140°C). Cook an additional 1-1/4 to 1-3/4 hours to medium (remove from oven when internal temperature reaches 155°F/68°C).

TIP
Barbecue Roast: Combine 1/4 cup (50 mL) each strong coffee and your favourite barbecue sauce with 1 tsp (5 mL) minced garlic; brush on roast before and during roasting.

Teriyaki Roast: Combine 1/4 cup (50 mL) each sherry and soy sauce with 1 tbsp (15 mL) dry mustard; brush on roast before and during roasting.

Cranberry Roast: Combine 1 can jellied cranberry sauce, 2 chopped green onions, 1/4 cup (50 mL) soy sauce, 1 tsp (5 mL) ginger. Heat and spread on roast. Reserve extra and serve heated with roast.
