GINGER BEEF SALAD

Tasty and quick, this recipe is sure to become a family favourite.

INGREDIENTS
1/4 cup   50 mL   apricot jam
1 tbsp   15 mL   grated fresh gingerroot
1 tsp   5 mL   minced garlic
1 tbsp   15 mL   Hoisin or soy sauce
1 lb   500 g   Beef Stir-Fry Strips (or Inside Round or Sirloin Tip Marinating Steak, cut into strips)
1/2   1/2   pouch, honey garlic or hot 'n spicy coating mix (i.e. Shake n' Bake)
8 cups   2 L   mixed baby greens or bagged salad greens

PREPARATION TIME: 5 - 10 minutes
COOKING TIME: 5 minutes

DIRECTIONS
In small saucepan over low heat, melt jam and stir in gingerroot, garlic and Hoisin sauce. Shake beef strips in bag containing coating mix. Stir-fry beef in preheated lightly-oiled skillet over medium-high heat for 2-3 minutes. Pour jam mixture over beef, stirring for 1 or 2 minutes to coat strips. Serve immediately over your favourite mixed greens.
