T-BONE STEAKS WITH PISTOU

This recipe is great for unexpected guests, since it can be made with steaks taken directly from the freezer.

INGREDIENTS
2   2   cloves garlic, finely chopped
1/3 cup   75 mL   fresh basil (or 1-1/2 tsp/7 mL dried)
1/3 cup   75 mL   freshly grated Parmesan cheese
1 tbsp   15 mL   tomato paste
1 tbsp   15 mL   olive oil
4   4   T-Bone Grilling Steaks (1/2”/1 cm thick), frozen (or fresh/defrosted)
1   1   bag (2 lb/1 kg) Little Potato Company Baby Bintje or Caribe variety potatoes

PREPARATION TIME: 10 minutes
COOKING TIME: 10-15 minutes

DIRECTIONS
1. In a bowl, pound garlic and basil into a paste. Mix in Parmesan cheese and tomato paste; beat in olive oil.

2. Broil or grill steaks on one side for 4-5 minutes for medium-rare, or 5-7 minutes for medium; turn steak and broil for an additional 2-3 minutes for rare or 3-4 minutes for medium.

3. Remove steaks and spread each steak with ¼ Pistou mixture, return to broiler for an additional 2-3 minutes (allowing slightly less time for fresh/defrosted steaks).

4. Meanwhile, boil baby potatoes. Serve steaks with baby potatoes and steamed vegetables.
