CHUNKY BEEF CHILI

Cook large batches of this chili and freeze in family-sized portions for use within 2 or 3 months. For a quick meal, defrost and reheat on the stove or in the microwave for a meal in minutes.

INGREDIENTS
1 pouch   1 pouch   quick stew mix
2 lbs   1 kg   beef cross rib or blade simmering steak, stewing cubes OR sirloin tip or round marinating steak, cut in 3/4 inch (2 cm) cubes
2   2   onions, chopped
2   2   green peppers, chopped
4 (14 oz)   4 (398 mL)   cans chili-style stewed tomatoes
2 (14 oz)   2 (398 mL)   cans kidney beans (do NOT drain)
1 1/2 cups   375 mL   rice
2 tbsp   30 mL   cocoa powder

PREPARATION TIME: 10-15 minutes
COOKING TIME: 30-45 minutes
MARINATING TIME: 30 minutes

DIRECTIONS
Mix quick stew pouch with water according to package directions. Marinate beef for 30 minutes in large pot.

Bring meat mixture to a boil and stir in remaining ingredients plus 2 cups (500 mL) water. Cover and simmer for at least 30 minutes.

Serve with tortillas, taco chips or crusty rolls and a salad.

TIP
You can omit the quick stew mix and brown the beef cubes in a large lightly oiled pot. Add 3 cups (750 mL) water and remaining ingredients and cook for at least 1 1/2 hours .

Time Saver: You can make this chili in 20-30 minutes by substituting ground beef or cubed, cooked beef and omitting the quick stew mix.
