HOMESTYLE BEEF STEW

New products, like quick stew mixes, take only 30 minutes to tenderize using natural ingredients found in pineapples and papayas.

INGREDIENTS
1 pouch   +/- 56 g   quick stew mix
1 lb   500 g   BEEF STEWING CUBES, BLADE or CROSS RIB SIMMERING STEAK or BONELESS SIMMERING SHORT RIBS, cut in 1-1/2” (3.5 cm) cubes
8 cups   2 L   fresh, frozen or canned vegetables, cut in chunks (i.e. carrots, onions, potatoes, celery, tomatoes, mushrooms, peas and/or green beans)
1 tsp   5 mL   dried thyme leaves
1 (10 oz)   1 (284 mL)   can beef broth
1/2 cup   125 mL   burgundy cooking wine (optional)

PREPARATION TIME: 30 minutes
COOKING TIME: 20 - 30 minutes

DIRECTIONS
Mix stew marinade pouch with water according to package directions and marinate meat in large covered pot for 30 minutes. Bring meat and liquid to a boil. Season to taste with pepper. Add remaining ingredients and stir. Cover, reduce heat and simmer for 20-30 minutes. Thicken with a mixture of 2 tbsp (30 mL) each of flour and water, if desired. Serve over noodles or with toast.

TIP
You can omit quick stew mix and brown beef cubes over medium high heat in a lightly oiled pot. Add an extra 1 cup (250 mL) water and remaining ingredients (except vegetables) and cook covered for 2 hours on stove top or in 325°F (160°C) oven. Add vegetables for the last half hour.
