MAPLE-GLAZED BEEF

A hint of maple adds character to this comfort food.

INGREDIENTS
2 lbs   1 kg   BONELESS BEEF SIMMERING SHORT RIBS (if bone-in, use 3 lbs/1.5 kg) or STEWING CUBES
2   2   medium onions, sliced
1   1   celery stalk with leaves, sliced
1/2 cup   125 mL   maple syrup
2 tbsp   30 mL   EACH: cider vinegar and chilli sauce (or mild salsa)
1 tsp   5 mL   EACH: Worcestershire sauce, dry mustard and bottled gravy browning liquid
3 tbsp   45 mL   quick-cooking tapioca*

PREPARATION TIME: 10 minutes
COOKING TIME: 1 3/4 hours

DIRECTIONS
Combine all ingredients plus 2 cups (500 mL) water in large pot. Season with salt and pepper to taste. Cover and simmer on stove or in 325°F (160°C) oven for 1-3/4 hours. Skim off fat and remove bones, if any. Serve with crusty rolls or French bread.
* Omit tapioca and mix ¼ cup (50 mL) cornstarch or flour with ¼ cup (50 mL) water to make a paste. Turn the heat to High 15 minutes before serving and stir in the paste. Cook until it boils and thickens.

TIP
Combine all ingredients plus 1 cup (250 mL) water in 4 quart (4 L) slow cooker. Season with salt and pepper to taste. Cover and cook on High for 4-5 hours (or on Low for 8-10 hours).
