[Home]  CAREFREE CRANBERRY ROAST

Prep Time: 10 min. Cook Time: 2½ - 3 hours
 
4 lb 2 kg SIRLOIN TIP, EYE OF ROUND or INSIDE ROUND ROAST
1 1 can (14 oz/398 mL) jellied cranberry sauce
2 2 green onions, finely chopped
¼ cup 50 mL soy sauce
1 tsp 5 mL ground ginger

Place roast fat side up in open pan. Heat remaining ingredients, stirring until smooth. Spread sauce mixture on roast, reserving extra. Cook roast, uncovered, in 275°F (140°C) oven approximately 40 min/lb (80 min/kg) for rare, 50 min/lb (100 min/kg) for medium-done. Slice thinly across the grain and serve with reserved sauce, heated.

Makes 10-12 servings.

Pepper Roast Variation:

Combine 2 tsp (10 mL) crushed peppercorns, � tsp (2 mL) EACH ground cloves and dried oregano, 2 tbsp (30 mL) Dijon mustard and 1 tbsp (15 mL) lemon juice. Spread on roast in place of cranberry mixture. Cook as directed above.
