In a small bowl, combine butter, orange rind, thyme, green onion and salt.
Blend well. Place butter mixture on a piece of waxed paper and roll into
a 2.5cm (1") cylinder. Chill well or freeze. Rub steaks with freshly
ground pepper. Sear over hot coals on both sides. Continue to barbecue
over medium coals until nicely browned on the outside and a tender juicy
pink on the inside. Serve sizzling hot topped with a slice of orange
butter.
