Here's your ticket to an easy one-pot meal. This satisfying soup takes only 17 minutes from start to finish.

Prep Time: 5 min. Cook Time: 12 min.
 
1 lb 500 g LEAN GROUND BEEF
1 1 package (35 g) taco seasoning mix
1¾ cups 425 mL extra mild or mild thick 'n chunky salsa
1 cup 250 mL beef broth
½ cup 125 mL instant rice
2 cups 500 mL frozen mixed vegetables

Brown beef in a large saucepan; drain any remaining fat. Add seasoning mix, salsa, broth and 4 cups (1 L) of water. Bring to a boil. Stir in rice, cover and cook about 5 minutes. Stir in vegetables and heat through. Serve with nacho chips.

TIP:  Substitute soup pasta for rice and simmer just until pasta is tender.

Makes 4 servings.
