[Home]  SEVILLE GLAZED PEPPER STEAKS
The Seville orange, grown in the Mediterranean region has a rather tart and bitter skin which makes it excellent to use in marmalades and as a tangy sauce for beef.

Prep Time: 2 min. Cook Time: 10 min.
 
4 4 Rib Eye Steaks (¾-1"/2-2.5 cm thick)
4 tsp 20 mL Peppercorn BBQ Seasoning or cracked pepper
½ cup 125 mL orange marmalade
2 tbsp 30 mL EACH vinegar and ketchup

Press 1 tbsp (15 mL) of seasoning on both sides of steaks. Mix remaining 1 tsp (5 mL) of seasoning with marmalade, vinegar, and ketchup. Grill steaks for 4-5 minutes, turn and brush with glaze. Grill another 4-5 minutes or until desired doneness. Spoon remaining glaze over steaks to serve.

Makes 4 servings.

TIP:  Substitute Beef Strip Loin or Tenderloin Steaks for Rib Eye Steaks. Grill thick red or Spanish onion slices with beef and brush with glaze.
