Rub surface of roast with one of the rub mixtures. Insert meat thermometer into centre of roast. Grill fat-side-up or cook on rotisserie over drip pan in closed BBQ over indirect medium heat (or roast on rack in oven at 325 F) for 20-30 minutes per lb. to desired doneness. Serve drizzled with sauce of your choice. Makes 8-10 servings. Super Sauces for your Summer Roast Swiss Onion Soup Au Jus - Combine remaining package of soup mix with 1/2 tsp (1 mL) nutmeg and 1 cup (250 mL) water and bring to boil. Simmer 5 - 10 minutes uncovered until slightly thickened. Server with Swiss Onion Roast.
