1 package (1 oz/28.4 g) Sun-Bird Thai Stir-Fry Oriental Style Seasoning Mix
1/2 cup 125 mL apple-lime beverage (i.e. Sun-Rype Apple Blends),or unsweetened apple juice
2 tbsp 30 mL soy sauce
1 lb 500 g Beef Stir-Fry Strips
4   green onions, sliced diagonally in 1 inch (2.5 cm) pieces
1 large orange, yellow or red bell pepper, diced
  salad cucumber, peeled and sliced thinly
1 package (5 oz/142 g) bagged salad greens
1/3 cup 75 mL honey roasted peanuts, chopped
chopped fresh cilantro and mint leaves (optional)

Combine Seasoning Mix with juice, soy sauce and beef strips. Marinate for 10 minutes in the refrigerator while preparing other ingredients. Heat a large lightly oiled skillet or wok over high until it sizzles. Using a slotted spoon, add beef to skillet, reserving marinade. Stir-fry beef for about 2-3 minutes until no longer pink. Add green onions, peppers and remaining marinade and stir-fry for another 2 minutes. To serve, fill plate with salad greens and cucumber slices. Top with hot stir-fry mixture and garnish with peanuts, cilantro and mint.
