Heat a large oiled deep saucepan over high heat. Add beef; cook and stir just until beef loses its pink colour, about 1-2 minutes. Remove beef from pan. Add pasta sauce and 1¾ cups (375 mL) water to saucepan; bring to boil. Stir in pasta, cover and simmer over low heat, stirring occasionally for 8 minutes. Stir in zucchini, cover and cook 2-3 minutes until zucchini is tender crisp. Stir in beef and heat 1-2 minutes until hot. Garnish with crumbled feta cheese, grated Parmesan cheese or sliced olives, if desired and serve with salad. Makes 4 servings. TIP: Removing beef from skillet while heating sauce and cooking moist ingredients like zucchini, keeps meat tender and prevents overcooking.
