RANCH-STYLE BEEF KABOBS & RICE

Ranch salad dressing mix stars in a brushing sauce for beef and vegetables in these rave review kabobs.

INGREDIENTS
1 lb   500 g   Marinating or Simmering Steak (Round, Sirloin Tip, Cross Rib or Blade) OR Grilling Steak (Sirloin or Tenderloin), cut 1 inch (2.5 cm) thick
1   1   package (165 g) Uncle Ben's Fast & Fancy Rice, Beef Flavour
1   1   EACH green, yellow and red bell peppers, cut into 1 inch (2.5 cm) pieces
1   1   package (28 g) Ranch creamy salad dressing mix
1 tbsp   15 mL   vegetable oil

COOKING TIME: 30 minutes
MARINATING TIME: 1/2 - 1 hour

DIRECTIONS
Trim fat, if any, from beef steak. Cut steak into 1 inch to 1ΒΌ inch (2.5 to 3 cm) pieces. Marinate beef cubes in ranch dressing for 30 minutes - 1 hour before grilling. Prepare rice according to package directions.

Alternately thread equal amounts of beef and vegetables onto each of four 12 inch (30 cm) metal skewers. In small bowl, combine dressing mix, 2 tbsp (30 mL) water and oil; mix well. If dressing is too thick add more water. Brush onto all sides of kabobs. Barbecue or broil on rack approximately 8 to 11 minutes until beef is medium-rare to medium doneness and vegetables are crisp-tender, turning occasionally. Brush kabobs with any remaining dressing mixture during first 5 minutes of grilling. Serve on bed of rice.
