Clever Quesadillas

You can make these ahead and have them ready to go as a tote-able dinner to eat while on the run for trick or treat night. They also are great nibblers for a Halloween party.

2 cups (500 mL) THAWED* Big Batch Ground Beef
½ cup (125 mL) shredded light Cheddar cheese
½ cup (125 mL) refried beans
⅓ cup (75 mL) salsa
1 green onion, thinly sliced
8 large flour tortillas
  1. Combine thawed* Big Batch Ground Beef, Cheddar cheese and refried beans, salsa and green onion in large bowl.
  2. Spread ½ cup (125 mL) mixture over 1 large flour tortilla. Top with second large tortilla. Repeat process with 6 remaining tortillas.
  3. Place tortillas on 2 large baking sheets. Bake in 450°F (230°C) oven for 8 to 10 minutes, until golden. Cut into wedges and serve with sour cream.

*To thaw 2 cups (500 mL) Big Batch Ground Beef Mixture, heat in microwave on MEDIUM power for 4 minutes.

Cook’s Notes: As a substitute for refried beans, mash ¾ cups (375 mL) kidney or pinto beans with a potato masher.
