Korean Beef Lettuce Cups

This recipe makes a simple lunch to enjoy prior to the Thanksgiving feast OR use as a dinner idea for relief from turkey overload after Thanksgiving weekend.

2 cups (500 mL) frozen Big Batch Ground Beef
¼ cup (50 mL) sodium-reduced beef broth
¼ cup (50 mL) hoisin sauce
2 green onions, thinly sliced
Bibb lettuce leaves
Fresh lime wedges
Shredded carrot and cucumber
Chopped cilantro or mint
  1. Combine Big Batch Ground Beef, beef broth, hoisin sauce and green onions in large skillet over medium-high heat. Heat through, stirring occasionally for about 5 minutes.
  2. Spoon warm beef mixture into individual lettuce leaves to serve.
  3. Top with squeeze of lime juice and serve with toppings such as shredded carrot, cucumber, chopped cilantro or mint. Roll up with your hands to eat.

Cook’s Notes: Korean Beef mixture is also great served over rice instead of in lettuce cups.
