With recent news highlighting the benefits of knowing what's in the food we eat, more moms are trying to make meals from scratch. But as any busy mom can tell you, cooking daily meals from scratch is like saying, ‘I'll get to the gym four times a week’ - sometimes it just doesn't work out that way.

In the Beef Information Centre (BIC) kitchens, resident Home Economist and Super-Mom, Joyce Parslow knows first-hand making healthy meals on the double isn't always easy. Two kids, soccer, piano lessons, play-dates, homework, life is hectic! Parslow says, When developing these latest recipes for the Fall issue of Make It Beef (MIB) I wanted to make my life, and the lives of other busy moms like me, easier. At the same time, Joyce knows just how important proper nutrition is for two growing active kids.

Including beef as part of family meals provides not just double, but four times more iron, five times more vitamin B12 and five and a half times more zinc compared to an equal serving of chicken breast. That makes Canadian beef one powerful protein! Here's why:

  • Iron: helps builds red blood cells, helps cells work in the body, carries oxygen from the lungs to all parts of the body, and helps back to school brains work as their best.
  • Vitamin B12: helps back to school brains work better, promoting concentration and memory. Research also suggests low B12 intakes contribute to poor pregnancy outcomes (neural tube defects), weakened mental capacity in children, as well as cardiovascular disease and osteoporosis.
  • Zinc: helps build and maintain a healthy immune system and is essential for growth and development. Zinc also helps muscles recover after exercise, like a game of tag at recess.
